I cannot blame Tugga for wanting to have pancakes all the time. I too get serious pancake cravings, especially in the evenings. Yes, I do restrain myself but with Tugga, I cannot. I am that mother who likes to go all out for cooking whatever the child demands (not a healthy sign, I agree) but I try to include as much of nutrition as possible in whatever I cook. The good part is, both my kids are non fussy eaters and they more or less eat everything that we cook at home. As I said, pancakes are Tugga’s favourite and I do not prefer giving regular AP flour pancakes all the time. I do variations with oats, whole wheat and sometimes banana. The easiest way to feed bananas is through banana pancakes or banana muffins or banana bread. The whole non fruit eating family then cannot resist having bananas.

How to utlise ripe or over ripe bananas? 

You could make banana bread and jazz it up with maple syrup and caramelised bananas or you could try your hand at banana pancakes and make increase the nutrition value by adding flaxseed powder to it. These banana pancakes can be made with all purpose flour or whole wheat flour. It is better to use flaxseed powder than whole flaxseed. Flaxseeds have a very hard case which are difficult to digest. Hence it is better to use flaxseed in powdered form for consumption.

Flaxseed has multiple nutritional value including fibre, protein and carbs. It helps in reducing cholestrol, lowering of blood pressure, improves digestion and reduces constipation, amongst other things. It is good for children too, especially if they suffer from constipation.

Sugar is not needed for banana pancakes

Since banana itself is super sweet, we do not need to add any extra sugar to the pancake batter. Just one egg, some baking powder and a pinch of salt along with the flour is enough. A little bit of butter is of course essential in making good fluffy pancakes which will not stick to your frying pan.

Banana Pancakes

No sugar banana pancakes are easy to make and are a healthier way to eat pancakes. Recipe Author: Madhushree

Ingredients
  

  • 3/4 cup ripe banana mash
  • 1/2 cup Flour AP or Whole wheat
  • 1 no Egg
  • 3 tsp flaxseed powder optional
  • 1 1/2 tbsp melted butter
  • 1/2 tsp baking powder
  • pinch of salt in case you are using unsalted butter
  • Honey or Maple Syrup with Mixed berries for topping
  • 1 Cup Milk

Instructions
 

  • Mash the bananas thoroughly to make a smooth paste. Then make a batter of all the ingredients above. Add milk slowly to make a smooth batter without any lumps and with a pouring consistency. You may not need one cup. So pour it slowly.
  • Heat a non stick frying pan and take a ladle full batter and pour on the hot frying pan. Using the back of your ladle, spread the batter into a round shape.
  • Reduce the heat and let the pancake cook. Do not cover. After a few second, you will notice air bubble forming on the pancake. With a spatula, see if the sides are released. Once the sides are released, flip the pancake to cook the over side. The other side takes less time to cook.
  • Once done, place your pancake on a plate. Drizzle with honey and top with berries or fresh fruits.
