Can we possibly name this as Holi cookies? I think colourful cookies will sound better.

He has his name saved in Madhushree’s mobile as Ashok Man Friday.  Coming from Gopiballavpur in West Midnapore,  a place in West Bengal and Odisha border, he has been there with the family for the last 8 years at least. He came to our house in 2015 and since then, life has been smooth (touch wood). For a working couple, managing a business, passionately blogging, parenting to a son touching five and children to dependent parents from both sides; there cannot be a greater boon than a ‘man Friday’.

He has a separate connection with the son and most of the times, the son bullies him. To an extent, the son teases him by saying ‘especial’ to him every time there is something special, just to make fun of him. At the start of Tugga’s school life in the ‘big’ school, he was naturally overawed by the big building, his new ma’am, new friends, uniform and almost everything around him – tiffin was the least bit of concern. Speaking of which, one of the criteria of putting Tugga in this school was the freedom of sending tiffin of your choice from home. Tiffins at schools act as a great source of bonding between friends, gives exposure to different cultures, food habits, cooking; makes one experience the thrill of stealing and also acts as a silver lining on a really bad day of punishments.

Now, Tugga has got a little bit of a foothold in the school, has grown a gang of friends with whom he supposedly hangs around (yes, hanging around as a term was as non existent in our times just as a transistor radio now) and he looks forward to his tiffin everyday. He has made it a ritual to ask everyday before leaving for school about whats there in the tiffin box. If Ashok is around, he would smile and say ‘Especial’ and Tugga, at the day end would share his evaluation of the tiffin.

Its the Holi week and also school closes till new session in April, so Madhushree wanted to surprise the son. This went as a tiffin on that day. The colourful cookies.

Colourful cookies 2

Colourful Cookies

Servings 24 nos approx

Ingredients
  

  • 1 1/4 Cup Flour
  • 1/4 Cup Brown sugar
  • 1/2 Tsp Baking soda
  • 1 Tsp Vanilla Extract
  • 1/2 Cup White chocolate chips
  • 1/2 Cup Caster sugar
  • 1/2 Cup Butter
  • 1 No Egg
  • 1/2 Cup Dark Chocolate Chips
  • 1/2 Tsp Salt
  • Few Drops Liquid Food Colour of Your Choice

Instructions
 

  • In a bowl, cream together butter and sugar.
  • Then add the egg and beat well.
  • Add the rest of the ingredients except the colours and the chocolate chips.
  • Once they are all mixed, divide the dough into two parts or into as many parts as the number of colours you want.
  • Then add one colour to one part of the dough and do the same for all the parts. Use as much drops you wants to achieve the desired depth of colour.
  • Finally add the dark chocolate chips in to the dough.
  • Please note that this dough is a bit sticky.
  • Spoon the dough on cookie sheet. You can make individual coloured cookies or mix and match 2 to 3 colours of dough in each cookie.
  • Bake in a pre heated oven (180 degrees C) for only 8 minutes. Be sure to take them out just at 8 minutes or less if you feel.
  • They will be soft at this point. Gently pull the cookie sheet out of the tray and place on a wire rack to cool down.
  • Before the cookies harden, decorate them by pushing some white chocolate chips on the soft cookies. The cookies harden and are ready to serve once they are cooled down completely.
  • Please note: It’s not necessary to bake all the cookies at once. You can store as much of the cookie dough in batches in the refrigerator for a week- 10 days and in the freezer for 6 months.
