Some dishes quietly define Bengali cooking. It’s not because they are fancy, but because of the thought and care that goes into making them. One of these dishes is Dhokar Dalna. This dish is a pure vegetarian treat that doesn’t have onions or garlic in it. It has always been a special part of our menus for pujos, weddings, and celebrations at home.
What Is the Origin of “Dhoka”? The Story of the Beginning
The word “dhoka” literally means “to cheat” or “to deceive”, and the dish lives up to that fun idea. When vegetarian guests came over in the past, cooks would shape these lentil cakes into shapes that looked like fish or meat, like diamonds and squares or little fish-shaped pieces. The idea was simple: fool the person for a moment, then provide them a great taste.
A lot of our ‘niramish’ food also comes from the time when widows in Bengal had to follow strict rules, especially about what they could eat. And niramish, or pure vegetarian food, means it is cooked without onions and garlic. Gravies become very flavourful by using ginger, cumin, asafoetida, whole spices, and ghee. Dhokar dalna is one such food.
Things are no longer the same here. Most homes today don’t follow these strict rules. But dhoka is still a popular vegetarian dish that is still made with the same care and skill.
Dhokar Dalna in the Kitchen Today
This dish is both rewarding and hard work, as any Bengali family will tell you. It takes time to soak the cholar dal (chana dal), grind it, temper it, cook it until it is the right consistency, shape it, and fry each piece.
That is why Dhokar Dalna is always served at weddings and other big events where a pure vegetarian section is needed. It shows respect for tradition, hospitality, and being aware of dietary needs. And because life is busier now, many companies have come out with dhoka mix powders that let you skip the soaking and grinding step. You mix the powder with water, cook it down into a dough, shape it, and then do what you usually do. When you want to save time without losing too much flavour, it works surprisingly well.

Dhokar Dalna
Ingredients
Method
- Drain the dal and grind it into a smooth, thick paste. Do not add too much water.
- Add ginger, green chilies, grated coconut, salt and sugar. Mix well.
- Heat 1 tbsp vegetable oil or mustard oil in a kadai. Add the dal mixture and cook on low heat, stirring continuously till it leaves the sides of the pan.
- Grease a plate with ghee. Pour the hot cooked dal mixture and spread evenly.
- Allow it to cool slightly, then cut into diamonds or squares.
- In case you are using store bought powder, then please follow the instruction of the pack.
- Deep fry the dhokas in vegetable oil over gentle heat until golden brown.
- To make the gravy, heat mustard oil in a kadai.
- Add bay leaf, cardamom, cinnamon and cloves, dry red chili and cumi seeds.
- Add heeng and reduce the heat.
- Add the potatoes and start frying them. Sprinkle salt.
- In a separate bowl, make a mixture of cumin powder, turmeric powder, Kashmiri red chili powder, ginger paste and water.
- After 4-5 minutes of frying the potatoes, add the spice paste and sprinkle a little more water while cooking the paste.
- Once oil starts to release from the sides, add the tomatoes and cover and cook on low flame till the tomatoes and the potatoes cook. Add water if needed.
- Once the potatoes are cooked, add the fried dhokas gently.
- Add more water depending on how much gravy you prefer. Cover and cook so the dhoka absorbs the flavours.
- Add garam masala powder, slit green chilies and ghee. Simmer for 1 minute and turn off the heat.
