Quite so often, we all go through midnight dessert cravings. Especially now, during the lockdown period, most of us are struggling through the day and we get our ‘me time’ at night. After the children have been put to bed, dinner is over and all kitchen activities have been completed, the body just craves for some sugar. With home delivery not being an option and an already tired body, this eggless chocolate mug cake is a saviour. This recipe is with the most basic ingredients, which are easily available and takes only 2 minutes. 

Why bake an Eggless Chocolate Mug Cake? 

Unlike most cake recipes, a mug cake does not require any real baking skill. Anyone can do it. I had to give the instructions just once to Anindya and he made it without any hassle. He has never baked a thing in his life and this was a first time success. All you have to do is mix the ingredients in the correct size of mug and microwave for 90 seconds. Also, in times like this, when you don’t have enough ingredients at home and when you don’t want to use up too much of anything, this is the perfect recipe. A mug cake also means that it is meant for a single portion or may be, two people can share from one mug. For a small family, this eggless chocolate mug cake is a blessing.

Ingredients required for the mug cake

Ingredients required are all purpose flour, castor sugar or superfine sugar, cocoa powder, baking powder, any vegetable oil, milk and chocolate chips (if you have any). What is interesting though, are the measurements, which are mostly 3 tbsps of all, except cocoa powder 2 tbsp and baking powder 1/4 th tsp. Hence, it is very easy to remember this recipe.

One key tip for baking the eggless chocolate mug cake

There are two things to remember. One is to not over whisk the batter. The minute everything is well incorporated, the mug can go into the microwave. The other key point is to microwave it for 90 seconds only. After that, leave the mug in the microwave for another 2 minutes, with the door closed. Do not open the microwave after 90 seconds to check. The residue batter on top cooks while resting.

Serving and Storing Suggestions

Serve it as soon as it is out of the microwave. You could also serve it with some vanilla ice cream on the side or on top of the cake. The mug cake can be kept in the refrigerator for a day. It dries up a bit so it is better to cover the mouth of the mug with cling film and then keep in the fridge.

Easy to make mug cake with basic ingredients. This recipe does not require egg but is moist and almost fudgy in the centre.

Ingredients
  

  • 3 tbsp all purpose flour
  • 3 tbsp castor sugar
  • 2 tbsp cocoa powder
  • 1/4 tsp baking powder
  • 3 tbsp chocolate chips
  • 3 tbsp any vegetable oil
  • 3 tbsp milk

Instructions
 

  • In a mug, take all the dry ingredients. Add the chocolate chips and mix them with a spoon.
  • Add the wet ingredients and mix with a spoon or a small whisk till everything is incorporated.
  • Put in the microwave for 90 seconds.
  • Don't open the microwave for another 2 minutes.
  • Open and serve the mug cake as it is or with vanilla ice cream.
