After two long years, schools have now opened. Most of the offices are back to normal operating spaces. No more online stuff and that also means tiffin boxes for kids. I had almost forgotten what it was to pack tiffin boxes. Two years back, Tugga was a little boy and Brishti was not in school. Tugga didn’t have many demands. But now he is ten and he specific wants his lunchbox. Sausage French toast roll-ups are one of his favourites for school tiffin.

For the first 5 years of Tugga’s schooling, his tiffin box used to have uthappam, noodles, desi French toast and an occasional alu paratha. All the above four are out of bounds now. That leaves us with egg rolls, sandwiches, wraps and bread pizzas. Once in a while, French toast (the real one and the desi one) and sausage French toast roll-ups have started making an appearance and he loves them.

These sausage rolls are extremely easy to make. You will need a few slices of white or brown bread. It would be easier with sandwich bread slices. Sausages are a personal choice whether you want chicken or pork sausages. A couple of eggs and butter are enough to make these delicious sausage roll-ups. This one is a great breakfast recipe too or an evening snack.

How to make sausage French toast roll-ups?

Lightly sauté the chicken sausages and keep them aside. Whisk the eggs with salt and pepper and keep them in a wide bowl. Place the bread slices on a flat surface. Cut out the sides and discard. Now take a rolling pin and roll the bread thinly. It will spread a little bit. Place one chicken sausage at one end of the bread. Roll the bread with the chicken sausage inside. Seal the other end with a little bit of water. Make all the rolls.

Now take a frying pan and let it become hot. Add butter and as it sizzles, dip the rolls one by one in the egg, coat the rolls completely in the egg and gently place them in the frying pan. Keep the heat low to medium. Roll over the egg rolls so that all sides are fried equally. When they are a golden brown colour, take them out on a paper towel. Serve then warm or at room temperature.
