Tomato Chop – the first interface
My hometown Chandannagore is famous for many reasons and one of them is definitely for Mishti. Jolbhora is definitely the showstopper and there are other sweet shops also. One of the least spoken about aspect of food in Chandannagore is the tele bhaja or bhaja bhuji. My first interaction with all sorts of chops happened here as we as a family loved savoury. Evenings were mostly dedicated for Telebhaja. Alur Chop, Machher Chop, Phulkopir chop in winters , Mochar Chop, Chingri Macher Chop (where you will find rare pieces of shrimps) – the variety was wide spread. Yet every winters in particular the Tomato Chop would make an appearance.
The wide array of chops and cutlets in Kolkata and suburbs –
Dimer devil, vegetable chop , Kancha aamer chop , the list is endless. In chandannagore since there was someone selling these in every 3 kms almost so each one added their own twist and artistry to the chops.
Some used to call it Tomator Chop and some Tomatom
It was also called Tomator Bomb – the spherical shape of the chop made people name it like that, I guess. There are two ways to make this and most popular one is scoop half of the tomato and the seeds out and stuff with a aloo filling. The other way is the one which we tried here – cut the tomato half, dip it in the batter and deep fry it. The essence lies in the crispiness when had hot . I like both the versions becasue the filling at times gives a nice play of texture
The tomato chop in Office para
Dalhousie and Dacres Lane – the two most frequented place for snacks and office para food. This chop is very popular there along with Muri or puffed rice. This is one combo which is very popular as evening snacks and some even has it for lunch also. Its easy yet for some reason this hasnt been so popular as other chop cutlets. No harm in all of us trying to make this a very popular one.

Ingredients
Method
- Cut the tomatoes into quarters and gently remove the seeds.
- Sprinkle a little salt over them and massage lightly, then set aside for a few minutes.
- To prepare the batter, take 1 cup of all-purpose flour, 2 tablespoons of rice flour, 1 teaspoon of black pepper, and salt to taste.
- Add 1 cup of milk and 2 teaspoons of melted butter, and whisk everything together until you get a smooth, lump-free batter.
- Dip each tomato piece into the batter, coating it evenly, then shake off the excess.
- Heat oil in a pan and carefully slide the tomato pieces into the hot oil.
- Fry until they turn crisp and golden brown. Remove and place them on a paper towel to drain excess oil.
- Sprinkle with a pinch of black salt and serve hot best enjoyed with a cup of tea or coffee.
