Take 1-2 plantain, 1 medium-sized brinjal, 2 small ridge gourds, 1 large, sweet potato, large potato and cut them properly.
Soak white sesame seeds in water for 15 minutes and then grind it into a smooth paste. Make matar dal’er bora (as explained in the lau diye shukto recipe and keep them ready also. You can choose to skip this too).
Heat 2-3 tsp mustard oil and temper with 1 tsp mustard seeds, 2 dried red chilies and 4-5 Methi seeds. Add the potato, sweet potato and plantain to this. Stir fry this on high heat for 3-4 minutes and then cover and cook them till they have softened to about 80 percent. Then add the ridge gourd and the brinjal. Sprinkle salt and sugar and stir for 2-3 minutes.
When fully cooked, add the matar dal bora (roughly broken) , ginger paste, 2-3 tbsp of sesame paste, enough water to cover the vegetables and give it a stir.Cover and let this simmer for 3-4 minutes.
Uncover and add a slurry of milk with all-purpose flour. Keep simmering and add ghee, adjust salt and take it off the heat.
