Rainbow Pancakes | Colourful Unicorn Pancakes

This is the best recipe for making fluffy colourful rainbow pancakes that your children will love.

Ingredients
  

  • 1 ½ cups all-purpose flour
  • 3 ½ tsp baking powder
  • 1 no egg
  • 3 tbsp melted butter
  • 1 tsp vanilla extract
  • 1 ½ tbsp superfine sugar
  • pinch of salt
  • 4-5 nos good quality food colour
  • 1 ½ cups milk
  • Maple syrup for topping

Instructions
 

  • Take the flour, baking powder, sugar and salt in a mixing bowl. Mix it and then make a well. Whisk an egg and add to the centre of the well.
  • Add vanilla, melted butter and 1 cup of milk.
  • Whisk it well. Add more milk if required to make a smooth batter which should be thick but of pouring consistency.
  • Divide the batter into different bowls (depending on how many food colours you have).
  • Add drops of food colour in each bowl and mix them well.
  • Take two non-stick frying pans. Heat both. When both the frying pans are hot, brush butter on both.
  • Pour pancake batter in the frying pan to 3-inch diameter. It is faster if you use two frying pans.
  • Keep the temperature low and let the pancake cook. When bubbles start to form on top, flip the pancakes.
  • After a few seconds, when the pancakes are cooked, slide them out.
  • Serve with maple syrup or honey.
